Cinco de Mayo
I love a good party. OK, I love a good, low-key party. And Cinco de Mayo was the perfect day for a low-key party. The weather was finally back to normal for May, warmer with mostly sunny skies and Mondays are great for relaxing, at least I think so. And we could celebrate Brianne Pruitt’s move to the position of Web editor. Congrats Brianne!
For drinks, we made fresh lime juice margaritas, no mixer stuff for us. For eats we made lots of guacamole, some shrimp and crab ceviche and had plenty of chips and tostadas to pass around. I even got to use the whole set of margarita glasses I received for my birthday and the outdoor furniture that we haven’t used since last fall.
For the simple ceviche, I combined lots of lime juice, quite a bit of diced onion, a handful of chopped cilantro, about a teaspoon of kosher salt and a whole bunch of crab and shrimp. Ceviche, especially when being made with already cooked ingredients, is just a matter of taste. We like lots of onion in my family and not much else by way of seasonings. The lime and seafood combination makes such a fresh, summery dish that it’s hard to resist.


First of all, thanks for the congrats. I’m very excited to be the new Web editor! Second, the ceviche was AWESOME! I really enjoyed all of the fresh food at the celebration. I also was pleased with the margaritas. I made some recently with triple sec and Rose’s sweetened lime juice, and they’re just not as good as the real thing. Well worth the juice squeezing and simple-syrup making (especially since I did neither)! Thanks for a great time!
